If you are a super health nut, you can forget the sugar altogether and use stevia which is a plant. You can literally dunk the leaves into your drink to add natural sweetness. Stevia is widely available these days even at Trader Joe’s and comes in either a syrup or powder form.
Cola Chip Blondies
Makes about 15 1″ square bars
Ingredients
1 1/2 sticks butter
3/4 cup sugar
1 free-range Grade A egg
1/4 cup cola syrup
2 cups flour + 1 Tb
pinch salt
1 cup dark chocolate chips
2 tsp baking powder
Instructions
Line an 8″ x 8″ square brownie pan with aluminum foil.
Butter the foil and set aside.
Sift flour, salt, baking powder and set aside.
Cream butter and sugar until light and fluffy.
Add the eggs.
Slowly incorporate the cola syrup.
Sprinkle 1 tablespoon of flour over the chocolate chips and give them a good toss to coat.
Set aside.
Reduce the speed of your mixer and add the flour mixture, a bit at a time.
Do not overwork the flour otherwise your batter will toughen.
Preheat oven to 350*F.
Add the chocolate chips and mix by hand.
Drop the dough into the prepared brownie pan, smooth the top and
bake 25-30 minutes.
Remove from oven and wait 10 minutes.
Lift the foil out of the pan. Cut bars into 1″ squares.
Arrange onto a pretty plate and serve.

Have wanted to try stevia! i would love to use it to sweeten my coffee and try adding it to greek yogurt.

I crack pumpkin seeds open faster than a South American parrot. That line is freaking hysterical! I am still coming to terms with Stevia. Was a bit bitter for me in the aftertaste. Today I tried Vitamin water- we dont drink soda at all but I was out with my daughter for lunch and thought I would try it. It was okay but happily no bitter after taste. So I think I will be using a bit more stevia around here.
